¼ cup almond flour
1 tablespoon milled flax meal (golden is best)
1 large egg
2 tablespoons sugar substitute
½ teaspoon baking powder
1 teaspoon melted butter
½ teaspoon ground cinnamon
Buttercream Cheese Frosting
6 tablespoons butter, softened
16 ounces cream cheese, softened
1 cup sugar substitute
1 tablespoon vanilla extract
1. Add all ingredients to a microwave-safe coffee mug, and mix with a fork until well combined.
2. Microwave for about 1 minute on high, or until batter rises in cup, and a toothpick stuck into the center comes out mostly clean. Microwaves vary, but 1 minute seems to be the minimum cooking time, so start there and add a few seconds, if needed.
3. Let cool 3 minutes before serving.
For Frosting (12 servings):
1. Beat all ingredients in an electric mixer on high until light and fluffy.
2. Spread on a completely cooled cake or baked goods.
